with Mustard Vinaigrette Skirt steak (2-2 ½ pounds)
Ingredients:
1 pack of Ky Darling Skirt steak
4 cloves garlic
tsp ground black pepper
1 ½ tsp kosher sal
½ tsp ground cinnamon
3 tsp smoked paprik
small pinch ground clove
3 tsp ground cumi
2 TA olive oil
2 tsp ground coriander
Mince garlic and mash to a paste with kosher salt; Stir all spices together in bowl, then stir in garlic and oil till a Paste forms.
Pat steak dry – then rub all over with paste. Put steak in a Zipper plastic bag and marinate, chilled at least 6 hours. Bring steak to room temperature- about 30 minutes.
While steak comes to room temp, prepare grill for cooking: If using charcoal grill, heat until you can hold your hand 5 inches above rack for 1-2 seconds. If using gas grill, preheat on high covered 10 minutes, then reduce heat to moderately high.
Grill steak on lightly oiled grill rack, turning over once. 3-5 minutes total for medium rare. Remove steak and let rest for 5 minutes. Slice steak diagonally across grain into ¼ inch thick slices.
POTATOES 2 large sweet potatoes (peeled and cubed in 1 inch cubes) 1 Table spoon Dijon mustard 4 tsp white wine vinegar ¼ tsp kosher salt ¼ cup olive oil 4 green onions (thinly sliced) for garnish Steam potatoes in a steamer or over boiling water until just tender. While potatoes steam, whisk together remaining ingredients. Add hot potatoes to dressing and gently toss to combine well. Serve Steak over potatoes. Garnish with green onions
